We may not realize how often we might be eating wheat and isolated starches or starchy 'flour blends'throughout the day.  They can be in just about every typical meal!  To avoid getting a pudgy 'starch belly' remember to read your labels, especially if you're buying gluten free products.  

blanched Almond flour...The wisdom of nature is truly astounding.  To think that every small almond contains the dormant energy and life force it takes to begin to sprout and grow into a great big tree is nothing short of miraculous. All it needs is a little water and moderate temperature, and in a short few hours, it comes to life.  Almonds are full of vitamins, minerals, and healthy fats....the good kind of fats that stimulate the production of a hormone that makes us feel full longer.  We use only blanched almonds, which are soaked to remove the skins.  This also removes the anti-nutrients and makes it easier for you to digest and absorb the healthy nutrients almonds offer.

organic Coconut flour...Coconuts are full of vitamins, minerals, and many trace minerals.  High in fiber with potent antimicrobial and antiviral qualities, coconut even helps strengthen our immune system. It's approximately 60 percent fat, and its main fat, lauric acid, is a medium chain fatty acid that is quickly converted to energy by our liver, speeding up our metabolism and promoting a lean body.  Coconut water’s mineral and electrolyte composition is so similar to human blood plasma that the sterile water from a freshly cracked coconut has even been used in IV form to re-hydrate an ill person, acting similar to saline solution!  More good info on coconuts.


organic Psyllium...Used for decades as a dietary soluble fiber supplement, pysllium comes from the Plantago ovata shrub and is indigestible to humans.  It can help to regulate cholesterol levels by stimulating the synthesis of bile acids and has been shown to attach to mycotoxins in the intestines and escort them out of the body.  Psyllium is terrific for digestion!  More good info on psyllium.

kosher Sweet Potato...Did you know this creamy fleshed member of the Morning Glory family is not even in the same botanical family as the potato?  Even though sweet potatoes taste so deliciously sweet, they're high in fiber and slow to digest, which means a slower release of their natural sugars. Their fiber is classified as a 'resistant' starch, meaning it's not digested into your bloodstream but travels through your digestive system to your colon. There it becomes a prebiotic fiber, feeding good little probiotic bugs in your intestines and raising the nutrient absorption of your food, including important minerals like calcium and magnesium.  Resistant starch has been found to promote weight loss because it’s not absorbed so it's not turned into fat like other carbohydrates. While research reveals that resistant starch improves blood glucose levels and decreases insulin resistance, in contrast, other starches, including those found in wheat flour, digest quickly and are sent directly into our bloodstream.      

Baking Soda...Baking Soda, or sodium bicarbonate, is a safe leavener (rising agent) when combined with acidic ingredients.  Its natural mineral name is nahcolite and is found dissolved in many mineral springs.

Sea Salt...Sea salt contains dozens of minerals and trace minerals our bodies need. Refined salt, with additives such as aluminum hydroxide is not the same thing.

Eggs - Egg Whites...High in protein, eggs are little powerhouses of nutrients. Proteins are a combination of amino acids. Nine of these acids are essential, which means we need to obtain them from our diet. If we’re low in or missing just one of them, our bodies cannot make the other proteins it needs. Eggs are a rich source of all nine of these amino acids.  We use egg whites in some of our baked breads and recommend them with our baking mixes. 

organic Apple Cider Vinegar...Apple Cider Vinegar is a good source of polyphenols, powerful antioxidants, as well as potassium and magnesium.  The acetic acid is able to kill dangerous bacteria while promoting the growth of beneficial bacteria.

*NOTE: Cassava flour and tapioca starch come from the root of the cassava plant, which naturally contains cyanide compounds, toxic to humans and animals unless processed.  For this reason, and its starch content, we choose not to use them as ingredients in our baking mixes.  For more information...just google it.
