With St. Patrick's Day coming up, this is a great time to be a sneaky li'l Leprachaun and trick your whole family into eating green foods, right?  These Potatoes taste Amazing and your family will just think you're creatively celebrating (I dunno, a pot 'o gold you have hidden somewhere maybe?) and never suspect how good these are for them!

SPAGHETTI SQUASH

Does this look or feel like our beloved spaghetti noodle in our mouth?  No.  Is it a delicious, easy and healthy alternative?  YES!  Many of you know about making zucchini 'noodles' and using them raw, or dehydrating and rehydrating them, another great alternative to noodles, but more time-consuming and unless you're eating them raw, is no more nutrient dense than the spaghetti squash.





Directions:

CAULIFLOWER 'RICE'

Okay, this one I'm a fan of!  But then, I like cauliflower.  I used the unsuccessful whipped coconut cream and made a quick chicken and veggie curry which was the perfect accompaniment for my cauliflower 'rice' experiment.





The directions are:

ROASTED CORN on the COB

This recipe (if you even want to call it that!) works great on indirect heat in a covered grill as shown in the photo.  But if your grill is busy, or you're stuck in the kitchen, just toss the corn on a sheet pan in a 325 degree oven for about 15.

As soon as they're cool enough to handle, peel off the husk and silk, it comes away really clean and easy, kids love to do it!  Slather it with butter and sea salt and you'll never want to eat it another way!
