A SEMI-RAW RECIPE!
With St. Patrick's Day coming up, this is a great time to be a sneaky li'l Leprachaun and trick your whole family into eating green foods, right? These Potatoes taste Amazing and your family will just think you're creatively celebrating (I dunno, a pot 'o gold you have hidden somewhere maybe?) and never suspect how good these are for them!
Even better, you can continue to add Raw Summer Squash (peeled Zucchini or the Yellow variety) to your mashed potatoes and it won't tur... Continue reading...

SPAGHETTI SQUASH
Does this look or feel like our beloved spaghetti noodle in our mouth? No. Is it a delicious, easy and healthy alternative? YES!
Many of you know about making zucchini 'noodles' and using them raw, or
dehydrating and rehydrating them, another great alternative to noodles,
but more time-consuming and unless you're eating them raw, is no more
nutrient dense than the spaghetti squash.
Directions:
Pop a whole one in the oven at about 325 degrees (or less) and bake
abo... Continue reading...

CAULIFLOWER 'RICE'
Okay,
this one I'm a fan of! But then, I like cauliflower. I used the
unsuccessful whipped coconut cream and made a quick chicken and veggie
curry which was the perfect accompaniment for my cauliflower 'rice'
experiment.
The directions are: Chop
up a raw head of cauliflower and pulse it in your food processor until
it becomes 'rice-like'. Simmer it in a pot of water until it is
tender. Pretend it's rice! Haha! But it works, it still tastes like
cauliflower, bu... Continue reading...

So
I happen to like these cute, li'l baby cabbage-lookin' things...I
happen to LIKE 'em A LOT! AND I REALLY LIKE 'EM AN EXTRA LOT WHEN
THEY'RE PREPARED LIKE THIS! EVEN ALL MY FAMILY LIKES 'EM A WHOLE, WHOLE LOT! (especially the ones who USED to say "eeew...I HATE those Baby Cabbage Looking Thingies!) There's
lots of good news about why we should be eating more Cruciferous
Veggies! When consumed raw we benefit from the enzyme activity to
assure digestion and assimilation more in the u... Continue reading...

Well,
now that the elections are done with, we can move onto the Holidays
beginning, of course, with Animal's favorite, Thanksgiving! I love
Thanksgiving too because it doesn't involve much more than food! No
crazy shopping and wrapping, no dying eggs and hiding baskets, no
dressing up and eating tons of candy. Just family, friends and good
food. Nice and calm, right? Unless you happen to be the chef in the
kitchen and then it can get a little crazy! I like to make a lot of the

This
recipe (if you even want to call it that!) works great on indirect heat
in a covered grill as shown in the photo. But if your grill is busy,
or you're stuck in the kitchen, just toss the corn on a sheet pan in a
325 degree oven for about 15.
As soon as they're cool enough to handle, peel off the husk and silk,
it comes away really clean and easy, kids love to do it! Slather it
with butter and sea salt and you'll never want to eat it another way! Continue reading...

I guess because I'm new at this blogging
thing I don't seem to plan around it very well! So, again I'm posting
one of my Potato Salad recipes at a strange time...the day after Memorial Day!
Hopefully it will still come in handy all summer long, or longer! This
is an altered version of my mother's recipe that I grew up loving. , I love to play with
other recipes but always come back to this classic flavor. Mom, of course made it using mayonnaise (which I'm a fan
of, especially my rec... Continue reading...

Hi Y'all!
I'm Annabelle, a quirky homemaker just tryin' to carve out my little piece o' sunshine in the California countryside. Botox and tofu are scarce in these parts. Besides, Mom always said "Tofu is a lot like life, you never know when it's gonna make you barf!"
