COCONUT WHIPPED CREAM

This substitution for Whipped Cream is dairy free and brilliant for my Vegan friends out there.  It's texture and visual appeal is perfect, but it's taste is not!  Yuck, I have never been a fan of canned coconut, period.  Blah!  It takes me seconds to pour warm water over dried, shredded coconut, blend and strain in my juice bag and enjoy the deliciously superior flavor to that of the canned variety!  I will use canned coconut milk in curries and soups where the flavor is muddled with herbs and spices. 

For those of you who want to give it a try here's the simple directions:  Start with a thick, organic brand like Nature's Harvest or Thai and place it in the refrigerator for several hours until it's really cold.  Turn it over and open the opposite end of the can and pour off the water, the heavy cream will be left in the can.  Scoop it out and whip it up with some sweetener and vanilla.  It doesn't whip as full as regular cream, but there you have it.  Worth the substitution?  NO.   Real Heavy Whipped Cream's taste is unsurpassed AND please read my post the Deal with Dairy to learn the health benefits of real Cream.

Sugar is OUT!  I will admit that small amounts of sugar have been one of the last things to go at my house because it's so cheap, delicious and easy to use.  But no longer will I turn a blind eye because sugar is killing us!  The amount of sugar and wheat (which turns immediately to sugar) in our diet is the #1 reason we are so fat and sick!

CHIA SEED 'EGG'

FLAX or CHIA SEED 'EGG'

I'm not big on Flax, but am very fond of Chia Seed. 
It makes a great alternative to egg in baking, but I rarely use it to replace eggs, as I have a constant supply from my lovely little chickens and their nutrient power and versatility is unsurpassed.

Also, I am not Vegan.  If I were I would use a Chia Seed Egg to replace my real eggs in baking.  I do add some Chia Seed in my grain-free/gluten-free baking a...

SPAGHETTI SQUASH


Does this look or feel like our beloved spaghetti noodle in our mouth?  No.  Is it a delicious, easy and healthy alternative?  YES!  Many of you know about making zucchini 'noodles' and using them raw, or dehydrating and rehydrating them, another great alternative to noodles, but more time-consuming and unless you're eating them raw, is no more nutrient dense than the spaghetti squash.

CAULIFLOWER 'RICE'


Okay, this one I'm a fan of!  But then, I like cauliflower.  I used the unsuccessful whipped coconut cream and made a quick chicken and veggie curry which was the perfect accompaniment for my cauliflower 'rice' experiment.  My paleo friends like this starchfree alternative! 


The directions are: 
Chop up a raw head of cauliflower and pulse it in your food processor until it becomes 'rice-like'.  Simmer it in a pot of water until it is tender.  Pretend it's rice!  Haha! ...
