Fresh Fruit Soft (or Frozen) Serve
Summertime gifts us with an abundance of fresh fruit and this is the time to enjoy it! Fruit is cleansing so this is a wonderful time to include lots of it in your diet, including cucumbers and zucchini (remember, anything with a seed is technically a fruit!) If you're actively eating keto, eat fruit when you're carb cycling. Feel free to use your imagination and vary this basic recipe by switching for your favorites. I've used everything from berries to grapefruit. The juicier the fruit is, the more banana you may want to throw in, otherwise it's more like a sorbet. I'm sorry, if that's a mistake, it's okay with me! And if you eat fresh raw eggs, you can toss one in too:)
INGREDIENTS & INSTRUCTIONS
Makes about 2 1/2 cups
2 cups diced nectarines, peaches, mango etc. (fresh or frozen)
1 cup chilled coconut cream (the solid part of the coconut milk at the top of the can)
2 tablespoons MCT or coconut oil (optional)
2/3 teaspoon pure monk fruit or stevia
For an immediate soft-serve consistency, have the fruit frozen. Add all of the ingredients to your blender or your and blend until smooth.
Notes: Some recent research suggests that fat and carbs together raises blood sugar longer. So, if you want to keep your blood sugar lower, omit the oil and replace the coconut cream with yogurt or nut milk.
If you use room temperature or chilled fruit, you'll have a smoothie consistency unless you toss it in your ice cream maker and freeze as directed.
