Sweet Almond Cookies

These cookies are so much like sugar cookies that you'd never know they were grain, sugar and starch free! I have another great recipe in my new book, the Ultimate Grain Free Cookbook, but if you haven't gotten around to purchasing it yet, (it makes a great Christmas gift:) , here's another one you'll really enjoy!

INGREDIENTS

1/2 cup palm shortening

1/3 cup syrup sweetener of choice (I used VitaFiber IMO syrup)

1-1 1/2 teaspoons almond extract

1 cup blanched almond flour

1/4 cup organic coconut flour

1 tablespoon konjac powder or 1 more tablespoon of coconut flour

1/2-2/3 t pure monk fruit powder/liquid drops or stevia

pinch of sea salt

DIRECTIONS

1. Use your hand held mixer to mix everything together until light and fluffy.

2. Drop by tablespoons onto a lined cookie sheet, or chill dough and roll out for cut-out cookies, or roll into a log shape and slice.

3. Sprinkle with granulated sweetener and bake at 350° for 8-11 minutes.
